Sweet Potato Beef Bowls

Ingredients

Sweet Potatoes

  • 6 medium sweet potatoes

  • 2 tablespoons Gefen Olive Oil

  • salt, to taste

  • pepper, to taste

  • garlic powder, to taste

  • onion powder, to taste

Spiced Meat

  • 1 pound ground meat

  • 1 teaspoon Pereg Cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 teaspoon chili powder

  • 2 teaspoons Pereg Paprika

  • 1/3 cup water

Sauce

  • 1/4 cup Gefen Mayonnaise

  • 1 teaspoon lemon juice

  • 1 teaspoon Sriracha or hot sauce of choice

  • water, to thin as needed

Toppings

  • iceberg or curly lettuce, chopped

  • diced tomatoes

  • diced red onion

Directions

Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.

Peel the sweet potatoes, then cut them into cubes. Place on the baking sheet. Toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, and onion powder until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet. Bake for about 30 minutes, or until they are crispy around the edges, stirring halfway through for even cooking.

In a large skillet, cook the ground beef over medium heat until browned and mostly cooked. Drain any excess grease if desired. Stir in the spices. Cook for a minute then add in the water. Allow to cook about five minutes on a low flame. Remove from heat.

In a small bowl, combine the mayonnaise, lemon juice, and Sriracha (or hot sauce of choice). Mix well to combine. Add water in slowly while mixing until it’s thin enough to drizzle.

In each serving bowl, layer the crispy sweet potatoes, seasoned ground meat, chopped lettuce, diced tomatoes, and diced red onion. Drizzle the prepared sauce over the top.

Notes:

Feel free to customize the toppings according to your preferences.

Adjust the spice level in the sauce to suit your taste by using more or less sriracha.
