Diets This sweet potato pie is a really indulgent treat, perfect for a large family gathering or Yom Tov meal. The dough is very easy to work with and will make a solid yet tasty crust that holds each piece of pie nicely. This cuts beautifully and makes a very large amount, so feel free to halve or quarter the recipe if you don’t need such a large quantity.
8 cups flour
3 cups sugar
4 eggs
2 tablespoons Gefen Vanilla
1 pound margarine
12 pounds sweet potatoes, cooked and mashed
2 dozen eggs
1 tablespoon salt
2 cups sugar
2 teaspoons cinnamon
8 cups Gefen Soy Milk or non-dairy creamer
4 tablespoons grated orange rind
12 ounces orange juice concentrate
Combine dough ingredients until it forms crumbly dough. Press into two 10- by 16-inch pans.
Mix all ingredients for filling. Pour over crumbs.
Bake for two hours.
Preheat oven to 375 degrees Fahrenheit.
