1. Preheat oven to 350°F. Spray a baking pan with non-stick cooking spray.
2. Clean and dry the chicken and lay it down in a baking pan.
3. Spread the brown sugar, mustard, and mayonnaise evenly over the shnitzel.
4. Sprinkle with cornflake crumbs. Drizzle with oil.
5. Bake covered for 45 minutes. Bake another 10 minutes uncovered.
