Sweet Spinach Salad

Although I enjoy salads a lot, I rarely have enough time during the hectic week to sit down and really enjoy them. That’s why on Shabbos and Yom Tov, when I get to take the time to sit with good company and enjoy my salad, a salad with a little extra oomph is definitely in order. Enjoy your Yom Tov and salad too!

Ingredients

Salad

  • 1 small bag romaine lettuce

  • 1/2 small bag spinach leaves

  • 2 pears, cut into long, thin strips

  • 1/4 cup sugared pecans, broken into pieces (substitute Gefen Dried Cranberries and pumpkin seeds if you don’t use nuts)

  • 4 dried apricots, cut into cubes

  • 1/2 cup pomegranate seeds

Dressing

  • 1/2 cup orange juice

  • 5 tablespoons oil

  • 5 tablespoons brown sugar

  • 2 tablespoons Gefen Vinegar

  • 2 tablespoons Gefen Honey

Directions

Blend all dressing ingredients in processor until smooth. Pour over salad right before serving.
