An Israeli-style salad that includes bulgur. Get creative with add-ins (think pomegranate). This recipe includes feta cheese and walnuts – scrumptious!

Ingredients

Bulgur

  • 1/2 cup bulgur

  • 1 cup boiling water

Salad

  • 1/2 cup soaked bulgur

  • 2 cups romaine lettuce

  • 1 ounce fresh parsley leaves, cleaned and chopped

  • 1 kirby, peeled and diced

  • 1 cup Beleaves Mini Broccoli Florets

  • 1 small plum tomato, diced

  • 2 and 1/2 small red onion, diced

  • 1/2 cup Ta’amti Feta Cheese, cubed

  • handful of walnuts, shelled

  • handful of pomegranate seeds

  • 3 tablespoons Gefen Olive Oil

  • 1 teaspoon lemon juice

  • pinch of salt

  • pinch of pepper

Directions

1.

In a small bowl, add bulgur, then pour water over it. Let it sit for 30 minutes or until water is absorbed.

In a large bowl, mix all salad ingredients and enjoy fresh.
