Diets A simple side dish that goes with every meal, this veggie classic is healthy, colorful, and easy to make! Perfectly seasoned and super tasty, this is a great veggie side dish for a weekday or Shabbat meal.
3 tablespoons oil
1 large onion, diced
5 to 6 cloves garlic, chopped or 5 to 6 cubes Gefen Frozen Garlic
1 red pepper
1 pound carrots
2 to 3 small zucchini
1 pound string beans, cut into thirds (see note)
2 tablespoons sugar
1 teaspoon salt
dash of pepper
All vegetables should be cut julinenne style.
Sauté onion and garlic in oil for five minutes. Add carrots, red pepper and string beans. Sauté for 20 minutes.
Add zucchini and sauté additional 20 minutes or until soft.
Add spices. Cook for another five minutes.
