A healthy ground turkey recipe that your whole family is bound to love. They won’t even notice the vegetables packed inside!
1 red pepper, diced
1 cup frozen riced broccoli
1 carrot, peeled and grated
4 cloves garlic
1 and 1/2 tablespoons oil
1 onion, diced
4 cups cooked white or brown rice, for serving
1 pound ground turkey
2 tablespoons brown sugar
1 tablespoon Gefen Cornstarch or flour
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
1 cube Gefen Frozen Ginger
2 tablespoons rice vinegar
1/2 cup Glicks Less Sodium Soy Sauce
1 and 1/2 tablespoons granulated sugar
2 tablespoons water
1/4 cup water
scallions
In a small saucepan over medium heat, cook soy sauce, water, rice vinegar, sugars, garlic and ginger until sugars dissolve.
In a cup, mix two tablespoons water and the cornstarch or flour until dissolved.
Add cornstarch slurry to the saucepan. Reduce to a simmer and mix until sauce thickens.
Remove from stove and set aside.
In a large skillet, heat oil and add onions and garlic. Sauté until soft.
Add ground turkey and sauté until cooked halfway, using a wooden spoon or strong spatula to break up turkey into small pieces.
Add riced broccoli, carrot, and pepper. Continue cooking until turkey is no longer pink.
Pour teriyaki sauce over turkey mixture and simmer for five to 10 minutes.
Spoon rice into a large bowl or several individual bowls. Add ground turkey. Garnish with sesame seeds and scallions if desired.
