Ingredients

Simple Salmon

  • 6 slices salmon, skin on

  • salt, to taste

  • pepper, to taste

  • paprika, to taste

Sweet Heat Sweet Potatoes

  • 3 large sweet potatoes, unpeeled and washed

  • 1/4 cup oil

  • 1/4 cup Gefen Maple Syrup

  • 1 teaspoon salt

Herby Crumb Zucchini Spears

  • 4 medium zucchini, unpeeled and washed

  • 1/4 cup oil

  • 1 teaspoon dried parsley

  • 1 teaspoon salt

Directions

Prepare the Sweet Potatoes

1.

Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line three metal baking sheets with parchment paper.

2.

To prepare the sweet potatoes, cut them in half in the width, then cut each half into eight spears. Mix remaining ingredients in a large bowl and toss with sweet potatoes to coat well.

3.

Place sweet potatoes on one baking sheet; don’t overcrowd. Bake for 20 minutes, flip over potatoes wedges, then bake for another 20 minutes.

Prepare the Zucchini

1.

Cut the zucchini into thirds in the width, and then cut each section into six spears.

2.

Mix the oil with the spices in a large bowl and toss with the zucchini to coat well. Add bread crumbs and mix so that they adhere to the zucchini as much as possible.

3.

Arrange zucchini spears on another baking sheet; try not to overcrowd.

4.

Sprinkle leftover bread crumbs over zucchini. Spray tops of zucchini generously with cooking spray. Bake for 40 minutes.

Prepare the Salmon

1.

Wash each slice and pat very dry.

2.

Season liberally with spices. Drizzle with a bit of oil and rub the spices into the fish.

3.

Place salmon on baking sheet and bake for 18 minutes.

Tips:

Metal baking sheets are always preferable when you want to achieve a nice, caramelized roast.

Try not to overcrowd the baking sheet so that the vegetables don’t steam and get soggy.

If you’ll be baking the vegetables at the same time, rotate the baking sheets halfway through.

For the zucchini seasoning, you can swap all the herbs for 3 teaspoons of Trader Joe’s Green Goddess Seasoning.

For the salmon, you can swap the seasoning for a generous coating of Traders Joe’s Salmon Seasoning. Always bake salmon with the skin on, as it enhances the flavor.

If you have a Betty Crocker pizza maker, make your salmon in it! It keeps it moist and bakes in just 10 minutes. After 10 minutes, you can open the lid and let the skin crisp up further.
