Diets These are truly the best blueberry muffins you’ll ever make again! The blueberries remain purple after baking and give a fabulous burst of color and flavor.
2 cups Glicks Flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons margarine, softened
1 egg
2/3 cup milk
1 tablespoon Gefen Lemon Juice
1 teaspoon Gefen Vanilla Sugar
1 cup fresh blueberries
2 tablespoons Glicks Flour
2 tablespoons sugar
2 tablespoons margarine, softened
1/2 teaspoon Gefen Cinnamon
In a large bowl, combine flour, sugar, baking powder and salt. Add margarine until mixture resembles breadcrumbs.
In another bowl, using a metal fork, combine egg, milk, lemon juice and vanilla sugar and beat slightly. Fold into crumb mixture until smooth (do not over mix!) Fold in blueberries.
Spoon batter into a greased muffin tin.
In a small bowl, combine all crumb topping ingredients and sprinkle over each muffin.
Bake uncovered at 350 degrees Fahrenheit for 30-35 minutes or until a toothpick comes out clean when inserted.
Preheat oven to 350 degrees Fahrenheit.
