A delicious and different option for weekday meals. Perfect for a work or school lunch! The texture of the tofu is chewy and “meaty”. The quick peanut sauce adds a ton of flavor, and the slaw ups the veggie game.
1/3 pound extra-firm tofu
1 tablespoon Glicks Soy Sauce
1 tablespoon Tuscanini Olive Oil
2 tablespoons Gefen Peanut Butter
1 tablespoon rice vinegar
1 tablespoon water
1 teaspoon Manischewitz Honey
1 tablespoon Glicks Soy Sauce
1 whole wheat wrap
1/3 cup broccoli slaw (raw)
Preheat the oven to 425 degrees Fahrenheit. Prepare a greased baking tray.
Remove the tofu from the packing liquid and pat dry. Place on the tray and brush with oil and soy sauce. Bake for 10 minutes. Flip, brush with oil and soy sauce, and bake another 10 minutes.
Allow to cool and slice into matchsticks.
Combine all ingredients and mix well.
Wrap the tofu, half the peanut sauce, and broccoli slaw in the wrap. To pack for work or school, wrap up in foil and refrigerate.
Pour the remaining sauce into a small container and use for dipping.

Healthy ingredients with balanced flavors that work synergistically. Doubled Peanut Sauce. After using Tofu Press, marinated Tofu in Soy Sauce & Olive Oil which I doubled. Made a small burrito to which I added Cheddar Cheese & Hot Salsa. Taste: #9/10. Spiciness: #1/19. Definitely will make again!
