Diets Hearty and flavorful, this soup is packed with nutrition. Serve it with some rolls and you’ve got a complete meal. Made all in one pot, bursting with flavor, beautifully balanced—what more could you ask for?
1 large onion, cut into half-rings
2 cloves garlic, crushed
1 and 1/2 tablespoons oil
2 bags green cabbage
6 ounces Tuscanini Tomato Paste
3/4 cup Glicks Navy Beans, presoaked
15 ounces Tuscanini Crushed Tomatoes
12 cups water
1 tablespoon salt
1/4 teaspoon pepper
1 teaspoon oregano
1 teaspoon basil
2 chicken bottoms
2 meat bones
In an eight-quart pot, sauté onion and garlic in oil until translucent, about seven to 10 minutes.
Add cabbage, tomato paste, navy beans, crushed tomatoes, water, salt and spices. Mix, then add chicken and meat bones.
Bring to a boil, then lower flame and simmer for three hours.
Remove meat bones and chicken bottoms. Shred the chicken and return to pot.
