Diets This garlicky tomato dip is a nice change of pace from the usual mayo-based spreads. Make sure to select the best quality tomatoes you can find, since they’re the star of the show here! Yield: 1 and 1/2 to 2 cups
4 soft Holland tomatoes, peeled (see tip)
8 cloves garlic or 8 cubes Gefen Frozen Garlic
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup oil
In a food processor fitted with the S-blade, blend tomatoes, garlic, salt, and pepper on high speed until completely puréed.
With the processor running on low speed, add oil and blend until well incorporated. Taste and add salt and pepper as needed.
