Tomato-Herb Schnitzel with One-Pot Gnocchi

What could be better than a comforting and homey dish of gnocchi made in one pot? That’s right, one that’s topped with crispy and flavorful schnitzel to complete the meal!

Directions

Prepare the Gnocchi

  1. Heat oil in a large, deep frying pan over medium heat. Add onion and salt and cook for about five minutes, stirring occasionally, until softened. Add garlic, zucchini, and Italian seasoning. Continue to cook for five to 10

    minutes, until softened.

  2. Add marinara sauce; raise heat until sauce is bubbling. Add gnocchi and stir to combine. Cover, reduce heat to low, and cook for about 10 minutes, until gnocchi is cooked through.

Prepare the Schnitzel

  1. Place chicken in a large bowl. Toss with cornstarch until all chicken is coated lightly. Add eggs, tomato paste, salt, and Italian seasoning. Mix well until all chicken is fully coated.

  2. Place bread crumbs in a shallow dish. Dip each cutlet to coat fully.

  3. Heat about 1/2 inch of oil in a frying pan over medium heat. Fry schnitzel for about three minutes per side, until cooked through and golden.

To Serve

  1. Place a portion of gnocchi on a plate. Slice schnitzel into strips and place

    over gnocchi just before serving.
