Turkey, Cherry & Almond Salad

A quick and easy chopped turkey salad with almonds for crunch and dried cherries for a touch of sweetness. Perfect for a light lunch or supper. Recipe by Jeff Nathan for Empire® Kosher. Sponsored by Empire Kosher Poultry.

Start Cooking

Prepare the Salad

  1. In a large bowl place the cooked chopped Empire® Kosher Turkey, red onion, celery, almonds, cherries, basil and poppy seeds. Toss to mix.

  2. Using a rubber spatula, fold in the mayonnaise and apple cider vinegar. Season with salt and pepper as needed.

  3. Serve with whole grain bread, lettuce and sliced tomatoes.

Note:

Empire Kosher Natural Turkey is minimally processed. No artificial ingredients.

Variation:

For a pasta salad: Prepare 8-ounce box of bow tie or orecchiette pasta according to package directions. Drain. Fold the Turkey, Cherry & Almond Salad into the cooked pasta for a great pasta salad! Add mayonnaise, vinegar, salt and pepper as needed. Serve immediately.
