Diets This is my go-to soup ever since I got married. I added the turnip later on and it elevated the flavor profile to a whole new level.
4 large red onions, sliced
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
2 zucchinis, peeled and sliced
4 to 5 carrots
1 sweet potato, peeled and cubed
1 potato, peeled and cubed
2 turnips, peeled and cubed
In a large pot, sauté sliced onions. Remove from pot, drain and set aside.
Add all the rest of the ingredients to the pot from which the onions have been removed, and sauté.
Add water to cover and cook for approximately two hours.
Blend with an immersion blender.
Ladle into bowls and top with the sauteed onions.
