Allergens
Diets 16 ounces Gefen Orzo, cooked according to package instructions
1 red, yellow, and green pepper, diced
1/2 red onion, diced
1 tablespoon Bartenura Olive Oil
3/4 cup feta cheese
3/4 cup ricotta cheese
1/2 teaspoon freshly ground Gefen Black Pepper
1/2 teaspoon oregano
1 cup pine nuts
In a large bowl, place cooked orzo and the diced vegetables.
In another bowl, place olive oil, feta cheese, ricotta cheese and spices. Mix well. Add the cheese mixture into the orzo mixture and mix thoroughly to coat.
Meanwhile, preheat oven to 350° F, place pine nuts into a pan and bake for 7 minutes, just until slightly toasted. Shake pan to turn nuts and bake 2 more minutes.
Once toasted, sprinkle on top of salad.
