Vegan Parmesan Cheese

Ingredients

Vegan Parmesan Cheese

  • 1/2 cup blanched almonds (see note)

  • 1/2 cup raw cashews (see note)

  • 1/4 cup nutritional yeast

Directions

Prepare the Vegan Parmesan Cheese

Combine all ingredients in a food processor until fine crumbs are formed or until desired consistency is achieved.

You can store the mixture in the refrigerator up to two months. Add it to any of your favorite recipes that call for Parmesan cheese, to bread fish or chicken, on salads, in pasta dishes, or on your favorite roasted veggies.

Notes:

Raw or roasted almonds with the peel can be used. Just keep in mind that if your almonds have a peel, the final product will have brown bits. And while I recommend raw cashews, if you use roasted, the final product won’t be that different.
