Diets Make quick, easy vegetable cutlets that taste great and are loaded with high-nutrient vegetables like cauliflower, broccoli, and carrots. Made with only a minimal amount of matzo meal, these cutlets are light on the waist.
1 (1-pound) package frozen California Blend vegetables
2 potatoes, peeled and cubed
3/4 cup Yehuda Matzos Matzo Meal
2 eggs
salt and pepper, to taste
onion powder, to taste
oil, for frying
Cook California Blend vegetable mix and potatoes in water until tender. Drain and mash vegetables.
Add matzo meal, eggs, and spices. Mix well. Form into patties.
Fry on both sides in hot oil until golden brown.
