Diets These easy vegetable cutlets are packed with nutrients. The veggie blend of your choice is cooked and mashed, then combined with a minimal amount of matzo meal and egg just to bind it all together. Fry, or bake, and dinner is served.
1 zucchini
1 stalk celery
1 carrot
1 onion
1 potato
1 parsley root
2 eggs
2 tablespoons Yehuda Matzos Matzo Meal
1/2 teaspoon salt
3/4 teaspoon Gefen Garlic Powder
1/4 teaspoon pepper
1 package California mix vegetables, cooked, drained and mashed
1 package Manischewitz Matzo Ball Mix
2 eggs
Combine all ingredients mixing well.
Peel and cook vegetables in water until tender. Drain.
Combine vegetables with remaining ingredients. Blend until smooth.
Form desired mixture into patties. Fry in oil on both sides until golden.
