This is a great alternative to potato kugel. This vegetable kugel has some carrots, zucchini, a few potatoes, an onion, olive oil, a bit of flour, eggs, salt, and pepper. You will keep coming back for more!
Preheat the oven to 350 degrees Fahrenheit.
Mix the eggs, oil, flour, salt, and black pepper in a bowl.
Add a few of the vegetables at a time to a food processor and process them using the medium shredding blade.
Once the vegetables are shredded, add them to the bowl with the egg mixture and mix really well.
Pour into a lightly greased nine- x 13-inch baking dish and bake for one hour.
