Vegetable Kugel


This is a winning vegetable kugel that uses basic ingredients and fried onions for lots of flavor. Lighter than potato kugel but no less delicious!


1. Preheat oven to 350 degrees Fahrenheit.
2. Grate onions and carrots. Sauté in 1⁄4 cup oil in a large skillet until lightly browned.
3. Grate zucchini into large mixing bowl and let sit for 20 minutes. Squeeze out excess water.
4. Add fried onions and carrots to zucchini. Add eggs, salt, and pepper.
5. Mix and bake, uncovered, in two 9-inch round pans, for 45 minutes.
