Veggie-Forward Spring Salad

Ingredients

Salad

  • tricolor carrots, sliced

  • red peppers, diced

  • cucumbers, sliced in quarter moons

  • hearts of palm, sliced in half moons

  • yellow baby tomatoes, halved

  • celery, sliced

  • button mushrooms, sliced

  • watermelon radishes, sliced in quarter moons

  • spiced pumpkin seeds

  • fresh herbs  (I used parsley)

Dressing

  • 1/2 cup fresh lemon juice

  • 1/4 cup avocado oil

  • 1 teaspoon toasted cumin seeds

  • 1 teaspoon sea salt

Directions

Add ingredients to a bowl. Toss with dressing and enjoy.
