1 cup Gefen Red Lentils
2 cups water
1 onion
3 to 4 carrots
2 sweet potatoes
4 to 6 cups water
salt
pepper
garlic powder
Add lentils and water to a pot, and cook until soft.
While they cook, peel and cut the onion, carrots, and sweet potatoes into small chunks.
Add four to six cups of water (until the pot is three-fourth of the way full), and then add the vegetables and seasonings.
Cook for another 30 minutes, or until the vegetables are cooked through (I prefer to wait for the sweet potato to be very soft).
Serve with your favorite toppings, sandwich, or even add in chicken for extra protein!
