When Chanie asked me to create another salmon recipe, my first reaction was, How am I going to come up with something original? Help! I am happy to report that this combination is different and delicious. A winner in my mind!
12 (1- and- 1/2-inch/4-centimeter) cubes salmon
1 cup Gefen Cornflake Crumbs
1 tablespoon wasabi powder
1 tablespoon water
1 tablespoon orange juice
2 teaspoons Glicks Soy Sauce
2 teaspoons Gefen Honey
dash of salt
1/2 cup Gefen Mayonnaise (low-fat is fine)
1 tablespoon wasabi powder
2 tablespoons orange juice
1 teaspoon orange zest
1/2 teaspoon Gefen Honey (or a bit more if you like it sweeter)
Preheat oven to 375°F (190°C).
In a bowl, combine the marinade ingredients. Dip the salmon cubes into the marinade and then coat with cornflake crumbs.
Arrange in a pan lined with Gefen Parchment Paper, and bake uncovered for 10 minutes.
Meanwhile, mix all the ingredients for the sauce in a bowl. Serve together and enjoy!

I guess you really have to like wasabi to enjoy this recipe. I thought the OJ and honey would balance out the wasabi but it didn’t even after I added more than the recipe called for. It was an interesting idea, but I would not recommend this recipe or make it again.
Family hit! really was quik and easy to make, and the inlaws were impressed! ( did subtiue coconut for the mayo, it was in the cupboard, lol)
Love that sub. And happy inlaws is a win win.
