2 cups collard greens, thinly sliced
1/2 cup cherry tomatoes
pomegranate seeds
green onion, sliced
2 large blood oranges, juiced
1/3 cup Wonder Melon Cucumber Basil
1/3 cup Gefen Coconut Milk
2 tablespoons Tuscanini Apple Cider Vinegar
salt, to taste
black pepper, to taste
Prepare the dressing. Combine blood oranges, Wonder Melon juice, coconut milk, and apple cider vinegar. Season with salt and pepper.
Pour over collard greens at least 10–15 minutes prior to eating so the acidity can cure the greens.
Garnish salad with blood orange, pomegranate seeds, and green onion.
