Diets You know those pink watermelon radishes that look so gorgeous in the produce section…so you want to buy them, but you don’t because you don’t know quite what to do with them. I love this recipe because it captures what I think Pesach food should be: fresh ingredients that shine in their simplicity. No complicated salad dressings. No complicated preparation. Just something bright and refreshing.
1 large watermelon radish, peeled and finely diced
1/2 red onion, finely diced
1 firm but ripe avocado, diced
2 carrots, peeled and finely diced
1 English or 4 Persian cucumbers, finely diced
1/2 package fresh parsley leaves, cleaned and chopped
3 tablespoons Gefen Lemon Juice
3 tablespoons Gefen Olive Oil
1 tablespoon Gefen Honey (or sub sugar)
1/2 teaspoon Gefen Salt, or to taste
pinch of Pereg Black Pepper
In a bowl, combine all salad ingredients. In a small bowl, combine dressing ingredients and mix with salad.
