Ingredients

Salad

  • 1 cup wheat berries, soft

  • 2 cups water

  • 1/2 teaspoon salt

  • 1/2 cup Gefen Hearts of Palm, chopped

  • 1/2 cup quartered cherry tomatoes

  • 1/4 cup diced roasted red pepper

  • 3 tablespoons washed and sliced scallions (white and green parts)

  • 2 tablespoons washed and chopped fresh basil or cilantro

  • 1/2 cup sliced almonds, toasted (optional)

Vinaigrette

  • kosher salt, to taste

  • black pepper, to taste

Directions

Prepare the Salad

1.

Combine the ingredients for the vinaigrette and set aside.

Place wheat berries in a colander, rinse under cold running water and drain well. Transfer them to a saucepan, add water and salt. Bring to a boil, reduce heat to low, cover and simmer for one to one and a half hours, until tender. Drain if necessary. Let the wheat berries cool completely.

3.

Combine wheat berries with the remaining salad ingredients in a large bowl and toss.

4.

Add the vinaigrette and mix to combine.

Notes:

If you don’t have time to roast the peppers, jarred red peppers (not the hot and spicy ones) can be substituted.
