1 cup wheat berries, soft
2 cups water
1/2 teaspoon salt
1/2 cup Gefen Hearts of Palm, chopped
1/2 cup quartered cherry tomatoes
1/4 cup diced roasted red pepper
3 tablespoons washed and sliced scallions (white and green parts)
2 tablespoons washed and chopped fresh basil or cilantro
1/2 cup sliced almonds, toasted (optional)
1 clove garlic, finely minced
2 tablespoons fresh lime juice
1 tablespoon white wine vinegar
1/4 cup Gefen Extra-Light Olive Oil
kosher salt, to taste
black pepper, to taste
Combine the ingredients for the vinaigrette and set aside.
Place wheat berries in a colander, rinse under cold running water and drain well. Transfer them to a saucepan, add water and salt. Bring to a boil, reduce heat to low, cover and simmer for one to one and a half hours, until tender. Drain if necessary. Let the wheat berries cool completely.
Combine wheat berries with the remaining salad ingredients in a large bowl and toss.
Add the vinaigrette and mix to combine.
