Diets I got this recipe from my sister Ruchie. I first tasted it when we had a birthday brunch for my mother and was hooked since. These muffins are so easy to make, and they’re really delicious.
Yields 12 muffins
1 cup oatmeal
1/2 cup Gefen Applesauce
1/2 cup honey
1/2 cup oil
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
pinch salt
1/2 9-ounce (255-gram) bag Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a muffin pan with paper liners.
Place all ingredients in a medium-size bowl. Mix until combined. Pour batter into muffin pan, filling each cup three-quarters full.
Bake for 18–20 minutes until golden brown and a toothpick inserted in the center of the muffin comes out clean.
