In truth, this is three great recipes rolled into one awesome bundle! It has:
A) a scrumptious latke/Potato kugel recipe,
B) an outstandingly delicious pulled beef recipe, and
C) the new unique combination which is a yapchik-like latkes recipe which I call “Yapchikes”.
This is a somewhat time consuming recipe but the amazing results make it well worth it!

Ingredients

Crockpot Pulled Beef

  • 2-3 pound 2nd cut brisket (do not use first cut)

  • 2-3 tablespoons yellow mustard

  • 1 and 1/2 cups of your favorite BBQ sauce (I like Sweet Baby Rays Honey Chipotle)

  • 2 tablespoons onion powder

  • 2 tablespoons paprika

  • 2 tablespoons garlic powder

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • 16 ounces beef broth (store bought is fine, alternatively water with some red wine and soy sauce can be substituted)

Latke

  • 10-12 medium sized potatoes

  • 2 medium onions

  • 8 eggs

  • 1 cup oil

  • 1 tablespoon salt

  • 1/2 teaspoon garlic powder

  • sprinkle of black pepper

Directions

Prepare the Crockpot Pulled Beef

1.

The night before making “yapchikes” take your defrosted brisket and place the meat in the crock pot. Coat it with mustard.

2.

Mix spices and pour roughly half on the brisket.

3.

Add beef broth and set to low (Do not set to high).

4.

After 12-15 hours the brisket should be fork tender and should pull apart easily with a fork. Larger cuts of meat will need longer.

5.

Remove from crockpot and pull the beef into shreds by using two forks pulling in opposite directions.

6.

Once pulled, add the pulled beef to a large frying pan or wok.

7.

Add one and 1/2 cups of BBQ sauce (more or less, to taste), a cup of the broth from the crockpot, and the remaining spice mix.

8.

Stir on a medium flame until well combined and heated.

Prepare the Latke Batter

1.

Peel the potatoes.

2.

Shred onions and potatoes in the food processor (do not use the ‘S’ blade).

3.

Transfer to large bowl and add all other ingredients and mix well.

Make the Yapchikes

1.

Add oil for frying to a large skillet and preheat.

2.

Next add latke sized portions of latke batter to the oil. When the first side is well done, flip and begin to fry the second side.

3.

When the second side is about two thirds done, add a similar sized portion of pulled beef directly to the oil and place the mostly fried latke on top of it, pushing down gently.

4.

Allow the meat and latke to meld in the oil for a few minutes and then carefully remove and flip so that the fried pulled beef is a scrumptious second tier to your already incredible latke!

5.

Garnish with spicy mayo and enjoy!!
