A delicious twist on roasted carrots, a perfect side for any meal.
2 pounds rainbow carrots, peeled, washed and dried well
2 tablespoons extra virgin olive oil
1 tablespoon Galilee’s Delicacy 100% Dates Silan (you can use maple syrup or honey alternatively)
1 teaspoon Haddar Dijon Mustard
1 tablespoon zaatar seasoning
2 teaspoons chopped fresh rosemary (optional)
1 teaspoon sea salt
freshly ground pepper
Preheat oven to 375 degrees Fahrenheit.
Mix together olive oil, silan, mustard, zaatar, rosemary, salt, and pepper. Coat on carrots.
Spread on baking sheet (I lined with parchment but probably best to use non-stick cooking spray for improved caramelization).
Roast for about 45 minutes, turning halfway through, until all carrots are soft and a fork can easily go through.

Finally! A carrot recipe I LIKE for rosh hashana! Even my teenage son enjoyed them. This will certainly be on the rotation for the coming years.
