Diets This savory dairy quiche is just the ticket for a weeknight dinner or an option at your next dairy buffet event.
1 recipeĀ quiche dough
1/2 pound shredded cheese
2 tablespoons flour
2 tablespoons margarine (use soy-free if needed)
2 cups thinly sliced zucchini
1 large onion, chopped
4 eggs, beaten
1 and 1/4 cups milk
1 teaspoon salt
1/2 teaspoon pepper
1 red or green pepper, chopped
Prebake quiche dough.
Toss cheese with flour, and set aside.
Heat margarine in a skillet. Add zucchini, onions and peppers and stir-fry over medium heat until tender. Set aside.
Combine eggs, milk and seasonings. Set aside.
Place half of cheese into pie shell. Arrange half of vegetables over cheese. Repeat with remaining cheese and vegetables.
Pour egg mixture over layers. Bake at 350 degrees Fahrenheit for 45 minutes or until center is set.

This recipe is delicious! Just made it for Shavuos. I have the original recipe from the cookbook. FYI that the steps are out of order. Order is 1, 4, 5, 6, 2, 3.
