1 1/2-2 lb Dry Aged cowboy steak
1 tablespoon cocoa powder
4 teaspoons cumin
2 teaspoons all spice
4 teaspoons crushed black peppercorns
2 shallots, diced
2-3 cloves garlic, minced
1 teaspoon thyme
2 teaspoons rosemary
1 1/2 cups Herzog Lineage Pinot Noir
3 cups beef broth
