Almond Butter Carrot Muffins

And they're gluten free, so you can even get a jump on your Pesach baking!

 4 eggs, separated
 2/3 cup apple butter
 3–6 tablespoons honey (adjust honey to achieve desired sweetness)
 2 6 ounce jars carrot baby food
 1 and 1/2 teaspoons baking soda
 18 ounces cashew or almond butter
 2 teaspoons vanilla extract
 1/2 teaspoon cinnamon
 1/2 teaspoon pumpkin spice or allspice (optional)
 1 large carrot, grated
