Get the recipe:
2 Tbsp olive oil ( optional or water sauté)
2 leeks white part only chopped
4 garlic gloved pressed optional
2 fennel chopped optional
4 stalks of celery cut in thicker slices
2 large carrots cut in half thick slices
2 peeled Yukon gold pot cut in chunks
1 peeled sweet pot cut in chunks
1 cup cubed butternut chunks
1 zucchini cut in 1/4 lengthwise then thick slices
1 yellow squash cut in 1/4 lengthwise then thick slices
1 turnip cut in cubes ( smaller then chunks)
1 cup short grain brown or Arborio rice
12 cups water
1.5 Tbs Sea salt adjust to taste
Pepper to taste
Optional fresh or dried herbs for flavor to taste - dill, parsley thyme, basil
