This Chicken Stir-Fry ranks high on Rena's list of favorite suppers. A simple cornstarch coating keeps the chicken juicy while creating a sauce that thickens right in the pan. And of course, you can swap in whatever vegetables your family likes, making this an easy supper that's a little different every time you make it.

Chicken Stir Fry
1 and 1/2 pounds boneless, skinless chicken thighs or breast, diced into small pieces
1/3 cup potato starch or cornstarch
olive oil, for sautéing
1 package mushrooms, sliced
1 to 2 handfuls mung bean sprouts
1 handful pea pods, snap peas, or vegetables of choice (carrots, green beans, etc.)
1/4 cup teriyaki sauce
1/4 cup water
sesame seeds, for garnish
sliced scallions, for garnish
cashews for garnish, (optional)
cooked rice, for serving (recipe follows)

Looks so good! What can I use instead of teriyaki sauce? Something healthier
2 quick questions can I do coconut aminos instead of teriyaki sauce and can I use arrowroot starch instead of potato starch!

Also,… my favorite rice right now is Jasmine rice I also like brown rice and it’s healthy nuttiness……AND I tried many times to cook rice and it never cooks properly so I buy the heaven and earth already cooked rice which is yummy and works really well. I just put it in a bowl and soak it in hot water for 4 min it if I want to defrost it really quickly….. 😌

The sauce may be too thin and liquidy, I think you’d need something to thicken it up a bit.
