Esty serves some version of this Confetti Cabbage Salad at nearly every Shabbos lunch - and she still hasn't gotten tired of it. Packed with crunchy cabbage, fresh herbs, grilled chicken (or your protein of choice), and a simple dressing that only gets better as it sits, this is the salad that could make Esty a salad person. Bonus: no forks necessary either.

1 package shredded red cabbage
1 package shredded green cabbage
1 bunch scallions, washed and sliced
1 cup fresh parsley, washed and chopped
1 cup fresh cilantro, washed and chopped
3 grilled chicken breasts, diced

We love this salad! Made a few times for supper already, and it was devoured each time!! I used leftover meat that I had from Shabbos, and it came out delicious!

YUMMMM just made this for dinner was devored by the whole fam!! I also added pepita’s and slivered almonds as crunch instead of the wonton chips Thank you esty This is a winner!!!
