3/4 cup sugar
zest of 2 lemons (optional) plus 1/2 cup fresh lemon juice (3 to 4 lemons)

Lemon curd stored properly in the fridge should last 1 week.
Could this be done with margarine? Esty mentions something about that.

I assume so because I’ve seen sooo many lemon curd recipes with margarine. However Esty did say she uses the olive oil because of the flavor – you can see it in the color!!:)

Can I use any kind of oil? Does it have to be Sicilian olive oil?
I think you could
Use olive oil because it gives it depth in flavor. Extra virgin olive oil is the absolute best – like everything higher quality again makes it richer in flavor however any olive oil is already better. ( Tuscanini is a little pricey but you can get inexpensive ones…)
Any way to swap the lemon flavor for vanilla, chocolate, or strawberry?
No. But you can make a chocolate ganache , caramel sauce or vanilla custard
is it a mistake at the end when she says join me next time for that kosher for passover meat cause that already came out
