Always looking for the kind of muffins that are good for you, but
don't taste like it? Yeah, so are we. These honey muffins are
deliciously sweet, with a burst of fruit in the center. Don't have apple
and cranberry? Try filling it with your favorite jam instead. The
possibilities are endless!
Muffins
1 and 3/4 cups flour (I used a combination of white whole-wheat flour and all-purpose)
1 and 3/4 cups oatmeal
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
2 eggs
1/2 cup Haddar Applesauce
3/4 cup Gefen Honey
3/4 cup oil
1 teaspoon Gefen Vanilla Extract
1/4 cup Gefen Soy Milk or other parve milk
Filling 1
2/3 cup Tuscanini Jam (flavor of your choice), OR
Filling 2
2/3 cup canned, whole-berry cranberry sauce
2/3 cup finely chopped apple
