Kibbeh Hamda
1 pound very lean ground beef
3/4 cup uncooked ground rice (ground by butcher or in a spice grinder)
salt
pepper, to taste
Filling
1/2 pound ground beef
1 tablespoon vegetable oil or schmaltz
2 tablespoons finely chopped celery
1 teaspoon salt
1/2 teaspoon Gefen Cinnamon
1 teaspoon ground allspice, such as Gefen Allspice
