Passover food can (and should!) be healthy and exciting! Like these gorgeous sweet potato toasts! They're loaded with flavor and it doesn't hurt that they're not bad to look at either. Trust us, this will be the dish that people will be talking about.

4 chicken breasts or 4 boneless thighs, about 1 and 1/2 pounds total, cut into 1/2-inch cubes
