Sweet Potato Galette

2 pre-made frozen 9 inch pie crusts
1/4 cup white sugar
1/4 cup brown sugar
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
2 1/2 tablespoons flour
1 tablespoon lemon juice
2 medium sweet potatoes, ideally long, round ones that have a fairly consistent diameter throughout
1/2 cup chopped pecans
1 tablespoon Gefen Maple Syrup
