Makes about 20 muffins.
Mix together eggs, sugar, silan, oil, and vanilla until smooth: add the flour, baking powder, cinnamon, and salt. Mix until combined. Then add the apples and mix until well distributed.
Using a 1/4 cup measuring cup, scoop the batter into a lined muffin tin. Bake at 350 degrees Fahrenheit for 17-20 minutes.
Remove from oven, allow to cool for five minutes, then transfer to a cooling rack. When cooled completely, drizzle with additional silan.
