Diets This apple kugel recipe is a perfect Pesach recipe for those of us who really miss our apple kugel over Pesach! Between the apples, nuts, cinnamon, and raisins, this kugel is packed with flavors that do not disappoint! This will quickly become a staple in your Passover recipe repertoire.
3 to 4 cups Manischewitz Matzo Farfel or 4 Manischewitz Matzos, broken into small pieces
3 eggs
1/2 teaspoon salt
1/2 cup sugar
1/4 cup melted butter or pareve margarine
1 teaspoon Gefen Cinnamon
1/2 cup chopped walnuts
4 large apples, peeled and chopped
1/2 cup raisins
butter or pareve margarine
Soak farfel or matzo pieces in water until soft. Drain but do not squeeze dry.
Beat eggs with salt, sugar, melted butter or margarine and cinnamon. Add to matzo mixture.
Stir in chopped nuts, chopped apples and raisins.
Pour into an eight- by eight-inch coated pan. Dot with additional butter or margarine. Bake at 350 degrees Fahrenheit for 45 minutes or until lightly browned.
