This combination may seem basic, but when the vegetables are grilled it tastes nothing short of gourmet. And of course, every menu needs a salad to keep the ladies happy.
Directions
Prepare the Salad
1. Toss sliced squash and sweet potatoes with oil and salt. Heat a grill pan over high heat and grill until soft, about eight to 12 minutes, depending on thickness. Flip as needed to avoid burning.
2. Spread spring mix on a large platter. Top with grilled vegetables, sliced apple, pumpkin seeds, and avocado crema.
Prepare the Avocado Crema
1. Puree all ingredients in a food processor until smooth.
