Diets This combination may seem basic, but when the vegetables are grilled it tastes nothing short of gourmet. And of course, every menu needs a salad to keep the ladies happy.
2 acorn squashes, sliced
1 small butternut squash, peeled and sliced
1 sweet potato, peeled and sliced
1/4 cup grapeseed oil
1 tablespoon salt
2 boxes checked spring mix
1 yellow apple, sliced
1 and 1/4 cups roasted, salted pumpkin seeds
Avocado crema (recipe follows)
1/2 cup Tuscanini Olive Oil
1 and 1/4 ripe avocados
5 teaspoons grated ginger or 5 cubes Gefen Frozen Ginger
3 teaspoons Gefen Honey
4 teaspoons Tuscanini Apple Cider Vinegar
Toss sliced squash and sweet potatoes with oil and salt. Heat a grill pan over high heat and grill until soft, about eight to 12 minutes, depending on thickness. Flip as needed to avoid burning.
Spread spring mix on a large platter. Top with grilled vegetables, sliced apple, pumpkin seeds, and avocado crema.
Puree all ingredients in a food processor until smooth.
