1. Mix ingredients to combine.

1. In a pot, place sugar, vinegar, and water and bring to a boil. Pour over onions. Store in an airtight container or mason jar.

1. Toast sourdough bread for one minute. Smear avocado mash on top. Add sliced tomatoes, pickled onions, feta cheese, and pumpkin seeds.
