Pumpkin Latte Energy Balls

Daughter-in-law approved! Energy bites are quick and easy fuel for an in-between snack and are great as end-of-meal treats.

Ingredients

Pumpkin Latte Energy Balls

  • 20 pitted Medjool dates (soaked in warm water if dry)

  • 1 cup pumpkin puree

  • 1 cup coconut flour (see note)

  • 1 teaspoon Gefen Cinnamon

  • 1/4 teaspoon ginger

  • 1/4 teaspoon nutmeg

  • dairy-free milk, such as Gefen Almond Milk, as needed

  • 1/2 cup cacao nibs or high cacao chocolate chips to be added by hand (optional, see note)

  • crushed nuts, shredded coconut, Gefen Cocoa Powder (optional, see note)

Directions

Prepare the Pumpkin Latte Energy Balls

1.

Add dates to the bowl of your food processor and pulse until they form a paste, scraping the edges of the bowl with a rubber spatula as needed.

2.

Add pumpkin puree, coconut flour, and spices. Pulse until the ingredients are combined.

3.

Adjust for the perfect texture: if too crumbly, add milk, one tablespoon at a time. If too runny, add coconut flour as needed.

4.

Optional: Add cacao nibs or chocolate chips and mix with a spoon or spatula until well distributed.

5.

Roll mixture into balls (about one tablespoon each), then roll in coating of choice if desired. Refrigerate or freeze until ready to enjoy.

Notes:

  · Flavor Variation: If you enjoy a more authentic pumpkin pie flavor, replace spices with one tablespoon pumpkin pie spice.   · No Coconut Flour: Almond flour can be used, but coconut flour is highly recommended for the best texture.   · Year-round: can substitute with hemp seeds, crushed pumpkin, or sunflower seeds.   Storage: Refrigerate in an airtight container up to seven days or freeze for longer storage.
