This has become a favorite side dish that I prepare often…it’s so simple and so good! It’s also good as a parve side without the cheese. Watch Victoria prepare this dish on 4 Amazing Things.
2 ounces goat cheese
1 (17.6-ounce) package Gefen Organic Beets
salt, for sprinkling
dried thyme, for sprinkling
2–5 ounces arugula
Preheat oven to 400 degrees Fahrenheit
Place goat cheese in the freezer (don’t do this ahead of time, only 15–20 minutes before using).
Drain and slice beets. Place on a greased baking sheet, sprinkle with salt and spray with cooking spray. Bake for 15 minutes.
Meanwhile, arrange your arugula on a platter or in a salad bowl. The amount of arugula you use depends on whether you’re simply using it as a base for the beets (i.e. serving it as a side) or whether you’re turning this into a salad and serving in a bowl. Drizzle arugula with Tuscanini Balsamic Glaze and toss.
As soon as beets come out of the oven, transfer to platter and grate the goat cheese on top. Drizzle with balsamic glaze and serve.
