Don’t be scared off by the number of ingredients. This is one special salad.
1 and 1/2 cup barley, such as Glicks Pearl Barley
2 cups canned black beans, drained
1 and 1/2 cups frozen corn kernels, thawed
1 and 1/2 cup diced tomato
1 cup frozen peas, thawed
1 cup peeled and chopped ripe avocado
1/4 cup cilantro, chopped (pre-checked)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water
2 tablespoons fresh lemon juice or Heaven & Earth Lemon Juice
1 tablespoon freshly grated onion
1 tablespoon vegetable oil
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
romaine lettuce leaves
slices of peeled avocado
wedges of tomato
lemon wedges, optional
Soak barley overnight, and cook in water until soft.
Combine barley, black beans, corn, tomato, peas, chopped avocado, cilantro, salt, and pepper.
In a jar or a salad dressing shaker, mix water, lemon juice, onion, oil, and garlic. Shake well.
Pour dressing over barley mixture and mix to coat.
If serving individually, place on a bed of lettuce leaves and garnish with avocado, tomato, and lemon wedges. Serve warm or at room temperature.
