Best Honey Cake Mix Hack

I’m so excited to bring you this super easy honey cake recipe hack for Rosh Hashanah, using a ready-made mix! It has everything you need in a honey cake. Warm spices, a moist, delicious texture, and -bonus!- less time in the kitchen! You can also use different shaped cake pans if bundts aren’t your thing. See the back of the cake mix box for baking times.

Ingredients

Honey Cake

  • 1 box Duncan Hines Spice Cake mix

  • 3 eggs

  • 1 cup water or cooled brewed coffee

Apple Cider Icing

  • 1 teaspoon apple pie spice

Directions

Prepare the Cake

1.

Preheat the oven to 350 degrees Fahrenheit.

Mix the ingredients together in the bowl of a mixer or by hand, until everything is incorporated.

3.

Spray a bundt pan well with cooking spray and immediately transfer the batter to the pan. Bake for 30 to 35 minutes, until a toothpick inserted in the cake comes out clean.

4.

Cool for 10 to 15 minutes, then loosen the edges with a knife. Invert onto a large plate or cake dome.

5.

Cool completely before icing (see below).

Prepare the Icing

1.

Combine all the icing ingredients in a bowl. Start by adding in one and a half tablespoons of cider or juice and add up to three tablespoons as needed. Pour over the cooled cake.

What am I doing wrong? It comes out very liquidy and sinks in the middle. When I leave it in longer, it’s dried out. Please help! Many thanks.

That could be because the pan is too small! What size pan are you using?

I use a bundt pan. BTW, yesterday, although sunken in the middle, it came out perfectly and on time!

Make Ahead I’ve made this cake several times and I love it. I’ve never made it ahead of time and frozen it. I would like to try this year, but I am worried about the glaze holding up by freezing it. Would you recommend baking the cake and freezing it, leaving the glaze off. Then after thawing make and apply the glaze?

Hi Gail, yes exactly! I would recommend freezing without the glaze and adding it on last minute before serving!
