Diets This is perfect with anything, even matzah. Make sure to pick firm tomatoes so they’re easier to peel. Yields 2 pounds (910 grams)
4 plum tomatoes, peeled
1 red pepper, peeled (see note)
1 red onion
2 tablespoons Tuscanini Lemon Juice
2 tablespoons Tuscanini Olive Oil
1 teaspoon Haddar Kosher Salt
1/2 teaspoon black pepper
Place all the ingredients in a food processor fitted with the S blade. Blend until everything is chopped, but still slightly piece-y.
Place in an airtight container and store in the fridge for up to one week.
