Blended Tomato Salsa


This is perfect with anything, even matzah. Make sure to pick firm tomatoes so they’re easier to peel. Yields 2 pounds (910 grams)


1. Place all the ingredients in a food processor fitted with the S blade. Blend until everything is chopped, but still slightly piece-y.
2. Place in an airtight container and store in the fridge for up to one week.

Notes: To peel raw peppers, blister the skin by roasting the pepper directly on your stovetop grates until it is completely blackened. Transfer to a bowl and cover with plastic wrap while still hot. Let steam for 10–15 minutes, then remove the plastic wrap and the peel wipes right off!
